Brussels sprouts are packed with Vitamin C, fibre, folate and they are also a great way to get B vitamins too! Check out this recipe the whole family will enjoy!
Ingredients
- Large bag of Brussels sprouts
- 4 rashers of free range bacon (lean)
- 1 tbsp extra virgin olive oil
- 3 tbsp hazelnuts
Method
Firstly, chop the hazelnuts in half then dry fry them in a non stick pan or wok for a minute or two over a medium heat to lightly toast them, remove from the pan and set aside.
Secondly, chop the bacon into small chunks. Heat ½ tablespoon of oil in the non stick pan or wok and cook bacon for a few minutes until slightly crispy. Remove from the pan.
Next, remove the outer layers from the Brussels sprouts, chop off the stalk at the bottom and very finely shred them. Heat the pan or wok again with the remaining ½ tbsp. of oil and stir fry for 1-2 minutes.
Add 2-3 tsbp of water to the pan or wok and allow sprouts to steam slightly for a couple of minutes. Add in the bacon and hazelnuts, heat through and serve.
