If you LOVE spicy chai lattes give this a go….
I only occasionally have them when I can find a cafe which stocks one of the chai concentrates without too much sugar (I don’t like normal sweet chai) …but as I’m was feeling a bit creative today I thought I’d try my hand at making my own spicy chai concentrate without any sugar (you can add a little when you serve if you liked, I added a tsp of honey to this one).
Result was yummmy…I am very happy with the recipe, here’s what I did…
Ingredients
- 6-8 cinnamon sticks (depending on the size)
- 2 large tsp of black peppercorns (add more if you like it spicy!!)
- 2-3 inches of ginger sliced (more if you like ginger, I would add more next time)
- 2 tsp vanilla extract or 1-2 vanilla pods
- 1 large tsp cloves
- 1/2 tsp ground nutmeg
- 10 cardamom pods crushed so seeds come out
- 3 cups of water
- 10 black tea bags
Method
Add all your ingredients to a large pot, except for the tea bags.
Simmer for 15mins, then add 10 black tea bags (I used Dilmar extra strength as that’s what I normally have, can’t abide by weak tea bags being English)
Leave for 5 minutes, and then strain.
Add about 50mls of this to a mug with warm milk… delicious!!!
