I just love this recipe, it's perfect for the whole family and great to freeze and pull out for lunches.
This is my Aunty Karen's recipe and it is a regular feature in our house - perfect for a lunch, picnic or snack. Do not be put off by the list of ingredients, which seems a very odd combination. I promise you won'tbe disappointed. It tastes a bit like stuffing, yum!
Ingredients
- 250g cottage cheese
- 2 tsp Marmite or Vegemite
- 1/3 cup oil
- 4 large or 5 medium eggs, beaten
- 2 cups rolled oats
- 2 tsp dried sage
- 2 tsp reduced-salt soy sauce
- 1 onion, finely chopped
- Freshly ground black pepper
Method
Preheat oven to 160C. Grease and line a 21cm x 11cm loaf tin.
Place cottage cheese in a large mixing bowl. Stir through Marmite or Vegemite until it is evenly distributed.
Add the remaining ingredients and mix together.
Spoon the mixture into the prepared tin. Bake for 40-45 minutes or until firm to the touch.
Allow to cool, then slice and serve. Enjoy a slice or two with a large salad.
This can be stored in the refrigerator for 1-2 days.
