My fabulous mother in law Ellen makes this beautiful quick and easy salad from good old green veggies!
It is super tasty and looks great so give it a go this week. If you cant find asparagus or sugar snap peas when you are making this or they are out of season, you can always just stick to green beans or add some edamame beans (you can buy them frozen) instead.
Ingredients
- 1 bag of green beans (approx 200g-250g)
- 1 handful of asparagus spears
- 1 bag of snow peas or sugar snap peas (approx 100-150g)
- 1 avocado
- Handful of cherry tomatoes, sliced in half
Method
Firstly, prepare the green veggies. Rinse them all then trim the green beans and remove the woody end of the asparagus spears by snapping them.
Steam all the green veggies for 3-4mins then remove from the pan/microwave and transfer onto a large plate or board to allow to cool quickly.
When the greens are totally cold, place them into a bowl and chop the avocado into chunks over the greens and stir through along with the tomatoes.
Add dressing (recipe below)
Dressing
- 1 tbsp extra virgin olive oil
- 3 tbsp lemon juice
- 1 heaped tsp of wholegrain mustard or dijon
Method
Whisk together or shake ingredients to combine in ajar, and add to your salad.
