Ingredients (serves 4)
- 1 medium sized potato, peeled
- 4 cups of frozen peas
- 1 tbsp mint leaves
- Zest of ½ lemon
- Seasoning
Optional: Splash of milk
Method
Slice the potato into 1cm thick pieces, bring to the boil in a pan of water, boil for 5-10 minutes or until potato is tender.
Add the peas and mint to the pan and cook for 5 minutes.
Drain the potato, peas and mint then add back to the pan.
Add a splash of milk and lemon zest.
‘Smash’ the peas by using the Puree/Mash attachment from the Kenwood Triblade to the consistency you like.
Serve with pan fried fish.
